Crispy Spiced Nut Slice

Crispy Spiced Nut Slice

This slice was made with Moroccan flavours in mind. The combination of almond, pistachio, cinnamon, turmeric, cumin and paprika give these a unique tasty flavour. If you haven’t been on a holiday for a while, they are also perfect as a day dream trigger material. These are the perfect snack to pick you up and carry you through the rest of the day when that mid to late afternoon slump hits. The combination of protein, healthy fats, fibre and touch of sweetness make for a very satisfying snack. 

Serves: 16

Ingredients 

20g butter

100ml maple syrup 

40g almond butter

110g puffed rice* 

100g slithered almonds

100g pistachios

2 tbsp flaxseed meal 

2 tbsp chia seeds

1 tsp cinnamon

½ tsp turmeric 

1/4 tsp paprika 

¼ tsp cumin

¼ tsp salt 

Method
  1. Grease and line a 23x23 baking tin with baking paper. 
  2. Place butter, maple syrup and butter in a small pan over gentle heat. Heat until butter is melted. See note*
  3. In a large bowl combine all dry ingredients and stir to combine. 
  4. Add the wet ingredients to the dry ingredients and stir until evenly coated. 
  5. Let stand for 1 hour to allow chia seeds and flaxseed meal to soak up moisture and assist with binding the ingredients.
  6. Preheat oven to 180 (160 fan forced) degrees Celsius and bake for 25 mins or until golden. 
  7. While still warm and in tin, with a small sharp knife gently cut slice into 16 pieces. 
  8. Allow to cool and set. Remove from tin once hard and go back over where you previously cut. 
Notes
  1. If your almond butter as separated, once you have warmed the maple syrup, butter and almond butter together you can transfer to a small bowl an use a hand mixer to make it homogenous. 
  2. I used Freedom foods rice puffs as they have added fibre. Brown rice puffs would also be a great higher fibre option, otherwise regular rice puffs will do.
