Breakfast Burrito
These breakfast burritos are warm, satisfying and packed with protein to keep you full all morning. They are surprisingly quick to make on the spot or can be made ahead of time and reheated ready for serving.
Breakfast Burrito
Serves 4 | 15 mins to prepare
Ingredients:
4x Small size wholegrain wraps
8x Eggs
¼ cup Low fat milk
4x pieces short-cut bacon, diced
1x Avocado, mashed
½ lemon juice
Cumin
2 cups baby spinach
Salt and pepper
Method:
- Heat non-stick frying pan over medium-high heat, add bacon and cook for 3 minutes.
- Meanwhile, whisk eggs and milk together in microwave safe bowl. Cook for 1 minute in microwave, stir and put back in for another 30 seconds. Stir again. Cooking times vary between microwaves and may need more time. Cook in 30 second increments.
- In another bowl mix cumin and lemon juice into mashed avocado. Salt and pepper to taste.
- To serve, place wrap on a plate and layer with guacamole, baby spinach, scrambled eggs and top with bacon. Wrap and enjoy.
Note: These can be made ahead of time and reheat nicely in the microwave or sandwich press. To reheat using microwave for ~60-90 seconds.
