Quick and Easy Cucumber Thai Salad
If you're looking for a great tasting refreshing summer salad you can't go past this winner. Not only is it super cheap to create but it totally packs a punch with flavour too! Because of it's simple base of cucumber it allows you to add more yummy things to it if you so desire.

1/2 Red Onion
4 Crushed Cashews
1 Tbsp Lemon Juice
