'FLAMIN' PUMPKIN PIECES
It's warming, spicy and a vegetable. Perfect as a side dish to help give you some flair and flavour to even the most simplest dish. Slice em, dice em, mash em the choice is yours, but there is no doubt they taste really great!
Stop serving boring bland steamed veg with no flavour, it's time to spice up your life and your insides with this simple but can't beat recipe. You can also have some fun of your own. This recipe is about allowing you let loose on your vegetables. See what spices you have in your cupboard and start just trying some together. You might be surprised with what YOU can even create!

SIMPLE IS THE ONLY WORD
So it's a pretty simple one this one all you need is a pumpkin and some spices. You really can't get any easier than that!
The thing I think I most love about the pumpkin is the colour of happiness that it adds to your plate. It's like staring at a sunflower. The colour is vibrant and mood stimulating and it just fills your plate with a feeling of happiness and energy.

Obviously the humble pumpkin goes best with the Sunday roast or whizzed up in a yummy pumpkin soup but I encourage you to add this guy to your plate on a more regular basis. Being rich in Vitamin A, Lutein and Zeaxanthin pumpkin may protect your eyesight and being nutrient dense and low in calories may also help to promote weight loss.
So without more to do, buy a pumpkin and fill up your plate with a colour promoting dose of happiness and packed full of flavour to boot! Check out the recipe below.

'Flamin' Pumpkin Pieces
Prep Time : 5 mins Serving Size : 1-2 slices per person
Description - It's quick and super simple to prepare and will give any meal that little bit of bang that your looking for. With spices added to help add a little heat and the flavour this recipe isn't just for halloween!
Ingredients
1 x Pumpkin
1 x tbsp smoked paprika
1/2 x tsp salt
1/2 x tsp cracked pepper
1/2 x tsp chill powder or chill flakes (alter depending on your personal heat levels)
1/2 x tbsp EVOO (extra virgin olive oil)
Instructions
1 - Mix all the spices together in a small bowl
2 - Preheat your oven to 200 degrees
3 - Carefully prepare your pumpkin. Slice or cube to your liking. I like to leave the skin on but again this it up to you.
4 - Place pumpkin onto a tray lined with cooking foil. Evenly pour the EVOO over the pumpkin, place the spices evenly over the pumpkin.
5 - Place in the oven for 20-30mins or until golden brown and soft to cut.
6 - Eat and Enjoy!
