Do you ever get sick of eating steamed broccoli? I can tell you right now I certainly have. My key to enjoying broccoli these days is by enjoying it in a super simple soup that anyone can make. Honestly, if you struggle in the kitchen you're about to experience how to cook with minimal ingredients with a tonne of yum!


Why broccoli soup?

Obviously being a broccoli soup we want our hero to be the broccoli. However I don't want you to just think it's literally whizzed up broccoli in a bowl. We have added a couple of other ingredients to simply jazz it up a little and give you an added kick of flavour without you needing to go crazy at the supermarket. 

Broccoli is one of those vegetables that you can say that it nearly has it all. From fibre and protein to iron, potassium, calcium, selenium, magnesium and stacks of vitamins from A, B, C, E, Kand folic acid it's just a great all rounder! 

If you're goal is to also lose weight, with it's low calories broccoli is a great filler option for any side salad, vegetable side or in a soup. It's winter now so we understand the feeling of wanting to come home to a simple no fuss dinner. 

The soup allows you to do just that. Make it on the spot or in advance and even freeze it if you need to. If it's a quick warming meal you want to enjoy at the end of a long work day than this soup is for you!

It Even Smells Awesome!

If you're not a fan of the smell of cooked broccoli don't be worried! With the added ingredients of ginger, garlic, turmeric and onion powder you'll have an amazing fragrance floating through your house in no time. This will have you feeling warm even before you've placed a spoonful in your mouth.

So go on, it's time to give it a whirl yourself. Then you can enjoy the benefits of being able to chill when you get home from the office grab a warming blanket and jump on the couch of a hot bowl of this beautiful and yummy soup.

Simple & Healthy Broccoli Soup

Prep Time : 5mins   Cook Time : 30mins  Serving Size : 3-4

It's healthy, quick and enjoyable. Eat as a side dish to a meal or enjoy it as a full     main serve. Whichever you prefer!


  • 2 large heads of broccoli (approx 4 cups)
  • 2 tbsp onion powder
  • 2 vegetable stock cubes
  • 1/4 teaspoon ginger
  • 1/4 Tbsp turmeric
  • 2 cloves garlic
  • 1 Tbsp olive oil
  • 4 cups of water
  • salt and pepper for flavour


  1. Add water to a large cooking pot.
  2. Add all ingredients and bring to the boil and boil for 10mins
  3. Bring the heat down and simmer for a further 10-20mins
  4. Whizz up all the ingredients with a stick blender
  5. Pour and enjoy!
